If you’ve been on TikTok or Instagram the past few months you’re sure to have seen this feta pasta dish in your feed. Since my middle child is a vegetarian, we thought we’d try this dish so we could all enjoy it.

With just a few simple ingredients, we had a delicious dish that everyone could enjoy. I found the recipe on Pinterest and we’ve made it twice in the past few weeks.

With the current prices of groceries getting higher and higher, I loved that I could make it for under $15 and it was plenty for all of us to eat. Next time, I may try adding rotisserie chicken pieces into it for extra protein for us meat-eaters.

Prep Time 5 mins
Cook Time 35 mins
Total Time 40 mins
Course Main Course

Ingredients
  

  • 2 cups Cherry or Grape Tomatoes
  • 4 tbsp Olive Oil
  • 1 block Feta Cheese
  • 16 oz Cooked Pasta
  • Oregano
  • Parsley
  • Garlic Powder

Instructions
 

  • Preheat Oven to 375 Degrees
  • Add Tomatoes to Baking Dish
  • Drizzle with 2 TBSP of Olive Oil
  • Place Feta Block in the Middle of Baking Dish
  • Drizzle with Remaining Olive Oil and Sprinkle Seasonings
  • Bake for 35 Minutes
  • Remove Baking Dish and Mix Ingredients
  • Add in Cooked Pasta and Serve

This delicious recipe popped up as a TikTok video a few weeks ago and I immediately knew it would be a hit in my house.

Canned biscuits are a staple in my house so we love recipes that we can incorporate them into. With a few more simple ingredients, we had a warm and delicious breakfast casserole on this cold winter morning.

Sausage, Egg, Biscuit, Gravy Casserole

Ingredients:

  • 8 count canned biscuit dough
  • 5 eggs
  • 1 – 2.64 ounce package country gravy mix
  • 1 lb sausage
  • 1/2 cup milk

Instructions:

    • Preheat oven to 350
    • Grease a 13×9 baking dish
    • Brown the sausage and drain
    • Cut biscuit dough into 4 pieces and line bottom of the baking dish
    • Layer sausage over biscuits
    • Whisk eggs and milk together then pour over sausage and biscuits
    • Make gravy according to instructions and pour over everything.
    • Bake for 35-40 minutes

Here’s the recipe for our thick & hearty firehouse chili!

You’ll need:

3 large cans of Bush’s chili pinto beans

1 can Bush’s chili kidney beans

1 can Bush’s chili black beans

2 packets of chili seasoning

1 green pepper 

1/2 an onion

1 package of hamburger meat. 

 

Cook low and slow for 6+ hours!

Between homework, basketball, jiu jitsu and baseball, our nights are B U S Y. Tonight I whipped up a brand new recipe, shrimp tacos using @gortonsseafood Butterfly Shrimp. These babies are a staple in our house since they’re incredibly easy to make, so we thought we’d try something new with them tonight. DUDE, they were a hit! I mean, look at the boy’s face! 😂
Ingredients:
1-2 boxes of Gorton’s Butterfly Shrimp
Cole Slaw (pre-made or homemade)
Avocado
Taco Shells
Any additional condiments you like!
 Toast up a few taco shells, whip up a fresh batch of cole slaw, slice up some avacado and you’ve got a quick & easy meal. What’s your favorite Gorton’s dish?

My favorite low carb / keto meals

Hello Love!
Today I wanted to share a few of my favorite Keto meals for you. If you’re not sure exactly what keto is, it’s a high fat, low carb diet to help regulate your sugar levels and help you manage your weight. Some people completely change their lifestyle around this diet but my husband and I do it a few times a year as a “reset” so-to-speak. When we came back from vacation a little over a month ago we started our diet back up because, like we always do on vacations. we ate TERRIBLY. Junky foods and WAY too many sweets.
When most people think of keto they think it’s nothing but bacon and cheese burgers but that’s not how we do it. We go more veggie heavy than meat heavy. 
We mainly do eggs and spinach every morning with an occasional side of bacon. Lunches are mainly salads or turkey/ham wraps on low carb tortillas and then dinner dishes vary depending on what we are in the mood for. With this diet we tend to get full and our meal portions get smaller and smaller. 
I didn’t think about writing this post until the very end of our cycle and I wish I could have taken photos of all our recipes but here are just a few of our favorites. Next go-round I’ll be sure to document everything better.
Being on Keto doesn’t mean you have to eat in every meal. While some restaurants are harder to eat at, the grilled chicken nugget meal, side salad, and diet lemonade from Chick-Fil-A is by far my favorite meal when eating out. I don’t know what the actual carb count is for this meal (I’m sure the marinade of the chicken has to have carbs) but I never feel bad eating this one. At other places we tend to just get a protein and 1 veggie side, like broccoli or a side salad. One time I had to eat at Wendy’s with my family so I just had a Jr. bacon cheeseburger (no bun) with a side salad. Sometimes you just have to think outside the box a bit if you’re stuck eating somewhere that doesn’t offer low carb.
A meat and cheese charcuterie board is always on the menu at our house. You can read more about this platter in THIS BLOG POST.
Italian Beef is a family favorite in this house and I make it all the time! It’s just a boneless chuck roast, a jar of pepperoncinis, beef bouillon cubes or beef broth, and a packet of dry french onion soup mix. I brown the meat on both sides, add the other ingredients and cook on medium for a few hours. It’s so tender that it just falls apart…and that heat kick is to die for. 
I usually cook this with mac & cheese and mashed potatoes but when we’re on keto I pair it with green beans and mashed cauliflower.
Taco night is our favorite night at home so instead of putting our fixings on tortillas, we load it on greens. This dish is nice and filling and we can spread the chicken or beef to last us a few days.

Now that the husband and I are back on Keto, I thought I would share one of our favorite snacks, our Keto-friendly charcuterie board.
We grabbed our favorite Hickory Farms summer sausage, and cheese tray from Publix, added in some fruits and my #1 personal favorite kept snack, salami wrapped with cream cheese and banana peppers (SWOON).
It’s a quick and easy tray to put together and I love all the colors!

Now that I’m a WAHM I’m on the hunt for easy, quick recipes to make for my little family. I’ve been asking friends & family to send me their best recipes and I’ve spent a lot of time on Pinterest looking for new ones.
A woman gave my mom a recipe for amazingly delicious + E A S Y peanut butter cookies and I make all the time.  I can’t believe I haven’t shared these with you yet!
3 ingredients + 10 minutes = H E A V E N
All you need is:
1 cup sugar
1 cup peanut butter (chunky or creamy, whatever you prefer)
1 egg
THAT’S IT! 
Mix them all together, {barely} roll them into a ball, and bake at 350 for 10 minutes.
They are the best cookies EVER.
They also have no flour so does that make them gluten free?  I’m not sure.

Can you believe it’s Thanksgiving already?!  Where in the world has the year gone? 
Thanksgiving is one if my favorite holidays, mostly because I get to eat the best food in the world that day.  There’s seriously nothing better than my mom’s stuffing!
One dish I love to make for fall is this delicious (and easy) pumpkin dump cake! 
Pumpkin Dump Cake 
1 (20 oz) can pure pumpkin 
1 (12 oz) can evaporated milk 
3 whole eggs 
1 c. white sugar 
3 t.cinnamon 
1 Betty Crocker Supermoist yellow cake mix
3/4 cup butter

Mix pumpkin, milk, eggs, sugar, & cinnamon until well blended.
 Spread pumpkin mixture in prepared baking dish. 
Sprinkle cake mix evenly on top of the batter. 
Place butter over the top of the cake mix. 
Bake 50 min @ 350.

 Let’s be honest…
my husband definitely didn’t marry me for my culinary skills.  He used to joke before we got engaged that the more I learned to cook, the bigger the rock…
well, that still didn’t motivate me.
With working a full time job at a middle school, being a blogger, managing three kiddos busy after-school schedule, and basically being a single parent every third day when my husband is on shift, I’m never interested in going home and spending hours in the kitchen.  It’s just not my thing, but when I find a super easy and super scrumptious (I love that word) crock pot recipe, I’m game.  I found this one on Pinterest many moons ago and my family LOVES it.
Steph, over at Plain Chicken, shared this wonderful Slow Cooker Cream Cheese Chicken Chili recipe on her blog and I’m so glad I came across it.  We always eat it with tortilla chips and will even eat it on a tortilla shell!
It’s definitely a must try!

 I mean, guys, I don’t think I’ve ever gotten so much traffic on a post than I did on the Slow Cooker Cream Cheese Chicken Chili. Food is definitely the way to people’s hearts so I’m sharing my go-to comfort food recipe with you.  This is by far my favorite thing my mom ever made growing up.  I’m not sure where she got this recipe from, but its the BEST!
I usually make this in the crockpot but it can be made on the stovetop too! I find the meat is more tender when it cooks in the crockpot. 🙂
 Beef ‘N Noodles:
1 package beef stew tips (browned)
Fill 1/2 your pot with water and add about 4-5 beef bouillon cubes
1 package dry french onion soup mix
1 package “No Yolks” noodles. I actually prefer the “Broad” noodles instead of the “Dumpling”
1 stick of butter
Brown your meat and add it to the water and cubes. Add in the dry soup mix and let this cook all day on low, or simmer about 45 minutes on your stove stop. Add in the noodles and stick of butter about 45 minutes before you’re ready to eat and you’re DONE!
Super easy & DELISH! Serve it up with some bread and go to town!
Your family will LOVE IT!
